Spiced Elderberry Syrup
3 cups water
4 oz dried elderberries
0.5 oz cinnamon sticks (we highly recommend using Ceylon - it's the best!)
0.2 oz fresh ginger, chopped (trust us, fresh > dried!)
1 oz. sugar (or other sweetener)
Combine first four ingredients in a sauce pan. Bring to a simmer, and cook on medium heat for 45 minutes to 1 hour. With 5 to 10 minutes of cooking time remaining, gently stir in sugar until dissolved.
If you're feeling adventurous, here are a few other ideas to try:
- Add cloves (a little, not a lot). Clove add some extra warmth, in addition to the cinnamon and ginger, that can be so nice in the winter.
- Try maple syrup or honey to sweeten instead of sugar.
